5. Glutinous Rice
Despite its name, glutinous rice does not contain gluten. The term refers to the rice's very sticky texture after cooking.
It is also commonly called sticky rice or sweet rice.
Glutinous rice is especially important in parts of Southeast and East Asia, including Laos, Thailand, Vietnam and Cambodia.
USDA estimates that glutinous and other specialty rice types account for approximately 2–3% of global rice trade.
Although that share is much smaller than ordinary long-grain rice, sticky rice has enormous cultural importance in several cuisines.
It is used for dishes such as:
