4. Chickpeas
Chickpeas have been part of Middle Eastern diets for thousands of years.
They are the main ingredient in some of the region’s most recognisable foods, including:
Hummus, falafel and balila.
FAO describes chickpeas as deeply embedded in Lebanese cuisine and reports average domestic consumption there of around 3.25 kg per person each year.
Across the wider region, chickpeas remain popular because they are inexpensive, filling and versatile.
They are served mashed, boiled, fried, added to salads or combined with tahini and olive oil.
