Rediscovering Tradition: Chef Ali Fouad's Lamb Ouzi Recipe for Ramadan

Here's Chef Ali Fouad's recipe for the classic Lamb Ouzi:
Ingredients:
- 250g Lamb Shank (or any part of the lamb)
Marination:
- 20g Yogurt
- 15g Ghee
- 7g Chili Paste
- 10g Seven Spices
Oriental Rice:
- 90g Minced Lamb
- 150g Basmati Rice
- 20g Red Onion
- 10g Seven Spices
- 25g Ghee
- 5g Bay Leaves
- 5g Whole Cinnamon
Cooking Method:
1. Marinate the lamb shank with yogurt, ghee, chili paste, and seven spices. Cover and roast in the oven for one hour until tender and well-cooked.
2. For the oriental rice, soak the basmati rice in water. In a large pot, melt ghee and sauté onions with seven spices. Add minced lamb and cook until browned. Incorporate the soaked rice and add water just enough to cover it. Cover the pot with aluminum foil and cook for 15 minutes or until the rice is tender.
3. To serve, layer the hot rice on a platter and place the cooked lamb shank in the center. Accompany with yogurt cucumber sauce or preferred condiments.
